Ingredients:
- 60grams of butter
- 1 large onion
- 2 cloves of garlic
- 3 carrots
- 2 potatoes
- 60 grams of pumpkin
- 1 zucchini
- 3 sticks of celery
- 2 fresh tomatoes
- 1 cup of frozen peas
- 1 tin butter beans
- 1/2 cup small pasta
Step 6 |
- Heat butter in large saucepan.
- Add finely diced onion and crushed garlic.
- Saute ingredients for 5 minutes before adding the rest of the vegetables which have been finely diced
- Slowly add the tin of drained beans.
- Saute for another 5 minutes then add enough water to cover vegetables.
- Season with salt and pepper and simmer for 3 hours.
- Half an hour before serving, add the pasta and continue cooking.
Serve immediately in a large soup bowl with crusty bread. Enjoy!
