Healthy Minestrone Soup

Sometimes we can find ourselves feeling a bit under the weather and what better way to pick ourselves back up and keep on going than to eat a healthy minestrone soup packed full of vegetables. We all need our 2 fruit and 5 veg but this soup will leave you feeling good for days with its rich flavours and healthy greens. What a great winter warmer!

Ingredients:
  • 60grams of butter
  • 1 large onion
  • 2 cloves of garlic
  • 3 carrots
  • 2 potatoes
  • 60 grams of pumpkin
  • 1 zucchini 
  • 3 sticks of celery
  • 2 fresh tomatoes
  • 1 cup of frozen peas
  • 1 tin butter beans
  • 1/2 cup small pasta
Step 6
Method:
  1. Heat butter in large saucepan.
  2. Add finely diced onion and crushed garlic.
  3. Saute ingredients for 5 minutes before adding the rest of the vegetables which have been finely diced
  4. Slowly add the tin of drained beans.
  5. Saute for another 5 minutes then add enough water to cover vegetables.
  6. Season with salt and pepper and simmer for 3 hours.
  7. Half an hour before serving, add the pasta and continue cooking.
Isabella's Tip:
Serve immediately in a large soup bowl with crusty bread. Enjoy!
